Green Snacks for St. Patty’s Day
Of course, the Green Beer and Corned Beef and Cabbage are longtime St. Patrick’s Day favorites that are here to stay, but there are so many more delicious creations that you can greenify if you have little ones in the house or are throwing a St. Patty’s Day gathering. Here are some new ideas to add a little more green to your celebration.
Lucky Spinach Quiche
- 10 oz frozen spinach, thawed and drained
- 3 eggs
- 1/3 cup half-and-half (or milk or cream)
- 1/2 cup grated gruyere or cheddar
- 1/4 cup grated parmesan
- 3 oz. cream cheese, room temperature
- 1/2 cup diced onion (white, red, or green onions)
- 1/4 tsp salt
- 1/4 tsp pepper
- 1/2 recipe pâte brisée (recipe below)
Preheat oven to 425ºF. Mix the cream cheese with the eggs, one at a time. Mix in the half-and-half, salt, and pepper. Then add the rest of the ingredients: spinach, gruyere, parmesan, and onions. Mix. Shape the pâte brisé. After the shape crusts are filled, place the baking tins on a baking sheet and bake the quiches for about 20 minutes. Cool for a few minutes.
Remove the quiches from the aluminum tins, line the baking sheet with parchment paper, and place the quiches on the lined sheet. Place back in the oven for 5-10 minutes until the crust sides crisp up. Let cool for 10 minutes, then serve.
Avocado Fries
- Oil For Frying
- 2 Avocadoes
- 2 Eggs, beaten
- 1 and 1/3 Cup Bread Crumbs
- 1 Teaspoon Lemon Pepper
- 1/2 Teaspoon salt
- 1 Teaspoon Lemon Pepper
- 1/2 Teaspoon Salt
- 1/4 Teaspoon Cumin
Mix the breadcrumbs, lemon pepper, salt and cumin. Set it aside. Cut the avocados in half and slice them vertically into 4 inch by 1 inch wedges. Set aside. Heat the vegetable oil to 335 degrees in a large frying pan, adding enough oil so that the oil is about 3 inches deep. Dip the avocado slices in the breadcrumb mixture, then in the egg mixture, then in the breadcrumb mixture again. Fry them for about 2-3 minutes, or until golden brown. Remove with a slotted spoon or tongs, and set them on a plate lined with paper towels to absorb the excess oil. Allow to dry for 10 minutes, then serve.
